Salsa verde ricetta tipica Maremma Toscana

Green sauce


- 500 g parsley
- 2 boiled eggs
- 2 anchovy fillets
- 1 slice of Tuscan bread
- 1 clove of garlic
- vinegar to taste
- extra virgin olive oil from the Ardenghesche Hills
- salt to taste

Finely chop the parsley, boiled eggs, garlic and anchovy fillets with a knife. Soak the slice of bread in vinegar, squeeze it well, crumble it and add it to the mixture. Mix with extra virgin olive oil to create the sauce.
