Pan lavato


"washed bread" - Appetizer

Ingredients:
- 4 slices of Tuscan bread
- 1 medium-sized cabbage
- 1 clove of garlic
- extra virgin olive oil from the Ardenghesche Hills
- vinegar
- salt and pepper to taste

Method:
Boil the cabbage, in the meantime toast the slices of bread and rub them with garlic. Drain the cabbage, dampen the slices of bread with the cooking water and place them in a tray seasoning them with vinegar, extra virgin olive oil, salt and pepper.
Squeeze the cabbage leaves, cut the leaves into small pieces, season with vinegar, extra virgin olive oil, salt and pepper and spread the slices on the soup.
